French-Canadian cuisine in 1930-1950: between identity, rupture and continuity

During the 1930s and 1950s, the reality of French Canadians was shaken up by numerous events that provoked a confrontation between the ideologies in place. These important meetings also participate in the change in food practices and redefine its constitution. This research proposes to study the evolution of the phenomenon between the years 1930 to 1950 in the digitized periodicals of the Library and National Archives of Quebec. Advancing into unknown territory, the results will be described in quantitative form and we will carry out a dialogue between the different actors of the time through the affirmation of identity, moments of rupture and the desire for continuity.
